Enchilada Casserole #2
1 pound ground beef or chicken or turkey cut in pieces
2 cans enchilada sauce
1 cup uncooked rice
either tortilla chips or fresh corn tortillas
2 cups or more of grated cheese
Crush chips - several handfuls. If using corn tortillas, tear into large pieces.
Place tortillas in microwave safe dish.
Add all ingredients except the cheese and mix well.
Make sure sauce covers all ingredients.
Microwave for 7 to 9 minutes - maybe a bit longer if using raw chicken or turkey.
Sprinkle with cheese and microwave 2 minutes longer.
