Asian Coleslaw

Coleslaw (easiest with a food processor--in fact, I wouldn't attempt without one.)

Head of cabbage -- thinly sliced

Red pepper or 2 -- thinly sliced

Yellow peppers, carrots, tomatoes, cucumber, or anything else you want to add -- thinly sliced


3 tablespoons peanut oil

1 tablespoon soy sauce

1 tablespoon rice wine vinegar

1 teaspoon dark sesame oil

2 teaspoons minced ginger (fresh -- best -- or bottled or frozen)

Mix above ingredients in a small jar with a lid. Cover and shake until well combined.

Toss dressing into slaw just before serving.
