6-8 carrots cut in long strips cooked sort of crisp tender
1/4 cup liquid from cooked carrots
2 T grated onion
2 T horseradish
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup Ritz cracker crumbs heated in 1 tablespoon butter
paprika for garnish
Arrange carrots in shallow baking dish. Mix liquid, onion, etc. and pour over carrots. Top with buttered crumbs and paprika.
Bake 375 for 15 minutes or as needed.
(Can be frozen ahead.)
